How To Make Great Salsa

  • 2 medium ripe tomatoes (little less than a pound ~12-14 oz.) -- seeded and finely diced
  • 4-6 Fresh serrano chiles, stemmed -- finely diced
  • ~15 sprigs of Cilantro -- finely chopped
  • 1 large garlic clove -- peeled and very finely chopped (optional)
  • 1 small (4-ounce) white onion -- finely chopped
  • 1 1/2 teaspoons fresh lime juice (or more to taste)
  • Salt, about 3/4 teaspoon

After chopping onions, set them in a strainer and rinse thoroughly -- this will eliminate some of the sour taste.

Combine all ingredients in a medium bowl. Mix.

Let stand for 30 minutes. Reseason with salt and lime juice to taste.

Makes 2 cups.

Note: for more wet salsa, include the tomato seeds and ~ 1 tablespoon of tomato paste.
